Creamy Chicken Enchiladas with White Sauce

Creamy and delicious. This will be your new favorite enchilada recipe!
Ingredients
- (3 cups, chunked (approx 2 packages)) Chicken Breast Large - Boneless Skinless
- (3 cups, shredded (1-2 blocks)) Sharp Cheddar Cheese (Raw)
- (3 Tablespoons) Pasture Butter
- (3 Tablespoons) Flour
- (2 cups) Chicken broth
- (1 cup) Sour Cream
- (3 Tablespoons) Green Onions
- (8-10) Tortillas
Directions
Preheat oven to 350*
Cut chicken into bite size chunks, cook in skillet with butter
Combine chicken and 1 cup cheese. Fill each tortilla - roll up and put in 9x13 pan
Melt butter in skillet. Sprinkle in flour and whisk to combine.
Add broth to flour mixture, cook until thickened and bubbly, let cool for 5 minutes
Once cooled, add sour cream
Pour sauce over prepared tortillas, add remaining cheese
Bake for 20-25 minutes or until sauce is bubbly
Top with green onion before serving.
